Jamaican Jerk Drumsticks with Fresh Tomato Salsa
Ingredients
12 George & Jo's Chicken Drumsticks
½ Cup Coriander – Roughly Chopped
½ Red Onion – Diced
6 Vine Tomatoes Red / Yellow – Diced 1cm Cubes
½ Red Capsicum – Diced 1cm Cubes
3 Fresh Limes
1 Tbsp Olive Oil
Jerk Seasoning
2 tsp Onion Flakes
2 tsp Paprika
2 tsp Cayenne Pepper
½ tsp Chilli Flakes
2 tsp Dried Thyme
1 Tbsp Garlic Salt
1 Tbsp Dried Parsley
½ tsp Black Pepper
2 Tbsp Brown Sugar
¼ tsp Cinnamon
½ tsp Ground Nutmeg
1 tsp Ground Allspice
Method
Place all seasoning ingredients into a large snap lock bag. Shake to combine. Add George & Jo's chicken drumsticks and coat with seasoning. Refrigerate for no less than 2 hours. Preheat oven to 180 degrees. Place drumsticks onto lined baking tray. Drizzle with oil. Place in oven for 35-45 mins or until golden brown and the chicken is cooked through. Whilst chicken is cooking place all fresh ingredients into a bowl together. Drizzle with olive oil and fresh juice from one lime. Remove chicken from oven and serve alongside fresh tomato salsa with fresh lime wedges.
