Thai Green Rolled Breast with Courgette Noodles & Fresh Herb Salad



  • 2 George & Jo's Thai Green Rolled Chicken Breast

  • 3 Courgettes

  • 1/8 Cup Thai Basil

  • 1/8 Cup Mint

  • 1/8 Cup Coriander

  • 2 Fresh Limes



Preheat oven to 180 degrees. Remove label and seal. Bake in container for 40-50 minutes. Whilst chicken is cooking prep salad, start by spiralizing the courgettes to create noodles. Destalk herbs and mix the leaves with the courgette noodles. Squeeze juice from one fresh lime over salad. Put to side. Check chicken breast to see if cooked through, a good way of doing this is by checking the internal temperature of the breast. If this is sitting above 76 degrees, this means the chicken breast is cooked through and ready to be served. Remove chicken from oven and slice. Serve alongside fresh salad with a wedge of lime.
